OATS PANCAKE

Pancake is a traditional old recipe which is a very famous breakfast recipe in  European countries. I made that traditional pancake many a times but never found it healthy due to all-purpose flour added in it.

I started making this recipe with half of all-purpose flour and half of powdered oats and then finally gave it a try with 100% oats.

Once or twice I couldn't nailed it that perfect as after trying again and again I realized only one important thing and that is, oats absorb more of liquid due to which the batter consistency becomes thick. To get the right consistency you need to add extra milk.

You will realize while making pancakes that after sometime the batter will become thick and oats will absorb all the milk, so do add milk little by little as and when required.


Serve with maple syrup and let kids enjoy this healthy pancake.


INGREDIENTS
1 cup powdered oats


1 tsp baking powder
1/4 tsp baking soda
2 tbsp powdered sugar
2 tbsp melted butter
1 egg
1 cup warm or room temperature milk (might require 1 1/2 cup depending on the quality of oats)

METHOD
In a bowl mix together powdered oats, powdered sugar, baking soda and baking powder. Keep aside.

Melt butter. Take another bowl, beat egg till frothy, add melted butter. Now add this mix in flour mix. Add milk little by little whisking batter continuously, making sure no lumps are formed, if possible use whisker.

The batter should be thick but flowing as shown in pic below.

Heat pan, preferably non-stick. Pour 1/2 tsp oil, clean the pan with tissue paper. Pour ladle full of batter and cook on low to medium flame. Once you see bubbles appearing on the top it means it's cooked and ready to flip.

Flip and cook from other side too.


Serve with maple syrup.

1. Don't keep batter for too long or it will not give good results.

2. It's very important to note that depending on the quality of oats proportion of milk can vary from 1 cup to 1 1/2 cup.  

3. If the batter becomes thick and absorb milk after sometime do add more milk little by little to get right consistency batter.

4. Don't cook on high flame else pancake will burn from outside and will remain raw from inside.

3. Add in flour mix.











4. Add milk little by little whisking continuously.











5. This should be the consistency of batter, thick but flowing











6. Pour ladle full of batter. Cook on low to medium flame











7. Bubbles have appear











8. Flip!














9. Ready to serve!














10. Serve with maple syrup!

OATS PANCAKE / EGGLESS OATS PANCAKE

INGREDIENTS 
1 cup powdered oats
1/2 tsp baking powder
1/4 tsp baking soda
2 tbsp powdered sugar
1 1/4 cup milk
2 tbsp melted butter
2-3 tbsp cooking oil


METHOD
Take one cup rolled oats and grind to make smooth and fine powder, add powdered sugar, baking soda, baking powder and mix well.

Add melted butter and milk in it whisking continuously to avoid any lumps.

Heat griddle or pan, add a teaspoon of butter and a teaspoon of oil, let butter melt. Pour a ladle full of batter and let it cook on medium flame.


Once bubbles start appearing on the top it means its ready to flip.

Flip and cook on the other side.

Serve with maple syrup and enjoy these super healthy pancakes with your kids and family.

These pancakes are not as fluffy as those traditional pancakes, but trust me these are very healthy and guilt free breakfast one can serve to kids.

Notes:
1. Oats are not required to be roasted before grinding.
2. Use any regular rolled oats. I used quaker oats.
3. You can beat add 1 egg for better binding, browning and fluffiness. 
4. Oats absorb lot of liquid, if any stage you feel batter is becoming thick add 2-3 tbsp of more milk.

PANCAKE

INGREDIENTS

1 cup buttermilk or 1 cup warm milk
5-6 tsp cooking oil

METHOD
In a bowl mix together flour, powdered sugar, baking soda and baking powder. Keep aside.

Melt butter. Take another bowl, beat egg till frothy, add melted butter. Now add this mix in flour mix. Add buttermilk little by little whisking batter continuously, making sure no lumps are formed, if possible use whisker.

The batter should be thick but flowing as shown in pic below.


Heat pan, preferably non-stick. Melt 1 tsp butter and 1 tsp oil, pour ladle full of batter and cook on low to medium flame. Once you see bubbles appearing on the top it means it's cooked and ready to flip.

Flip and cook from other side too.

SPINACH CUCUMBER PUDA

SPINACH CUCUMBER PUDA

INGREDIENTS                                  Serves: 1 person

3 tbsp thinly sliced spinach
3 tbsp thinly grated carrot
3 tbsp thinly grated cucumber
1 tsp salt
2 tbsp curd
2 tbsp refined flour
1 tbsp HOMEMADE RICE FLOUR (optional)
2 tbsp powdered oats
1 tsp suji (semolina)
1 tbsp whole wheat flour

METHOD

In a bowl, mix refined flour, wheat flour, oats, suji and salt. Now add spinach, carrot and cucumber and curd mix well, add little water if required to make thick batter. Put little oil on pan, spread this batter and cook till becomes brown. when cook, cut it in round shape using bowl. serve with sauce.

* You can substitute refined flour with besan, atta or makki ka atta depending on the taste of your family.

FOR GLUTEN-FREE YOU CAN OMIT REFINED FLOUR AND WHOLE WHEAT FLOUR

BANANA OATS PANCAKE



BANANA OATS PANCAKE   No. of Serving:1
                                                                         INGREDIENTS
3 tbsp mashed banana
2 tbsp powdered
oats
1 tbsp refined flour (Maida)
1 tbsp rice flour (optional)
2 tbsp powdered sugar
� cup milk

METHOD
Mix all the above ingredients to make little thick batter. Pour little oil on non-stick pan, spread the banana batter. As the batter starts forming bubbles it means down side is cooked, flip it and cook from the other side. Serve with chocolate spread; it enhances the taste of banana pancake which kids love.
You can garnish with icing sugar, chocolate syrup and strawberries.

MIXED DAL CHILA

MIXED DAL CHILA

1/2 cup Chana dal
1/2 cup Urad dal
1/2 Arhar dal
1 chopped onion
1 tbsp processed cheese
salt to taste
1 tsp ginger
1 tsp cumin powder
1 tsp fruit salt

METHOD

1. Soak all the dals overnight.
2. Grind dals and ginger to form a paste
3. Add salt, cumin powder and fruit salt in it.
4. In a non-stick pan, put 1 tsp oil, spread the batter and add onion and grated cheese on top.
5. Turn it and cook till it becomes golden brown.
6. Garnish with coriander leaves and cut it in different shapes.
7. Serve hot with sauce or chutney.

VEGETABLE PANCAKE

INGREDIENTS

1/2 cup grated bottle gourd
1/2 cup grated carrot
1/4 chopped spinach
3 tbsp whole wheat flour (Atta)
2 tbsp HOMEMADE RICE FLOUR (can use maida)
2 tbsp powdered oats
1 cup curd
some water for batter

METHOD

In a non stick pan saute carrot and bottle gourd till it becomes soft. In a bowl, add whole wheat flour, powdered oats, rice flour, salt, curd, add little water if required to make batter, now add saute vegetables.

In non-stick pan, put 1 tbsp oil and spread the batter to make pancakes till it turns golden brown.


Now cut the pancake in child's favorite shape and decorate it with boiled peas as eyes and ketchup to make smile.

YOU CAN ADD GRATED CUCUMBER, CORIANDER DEPENDING ON THE TASTE OF YOUR CHILD.

5. Now add all flours (whole wheat flour, powdered oats, rice flour)












6. Now add curd.

9. Heat oil in pan.













10. Pour ladle full of batter and spread in round shape.














10. Cook from both sides till golden in color.













11. When cooked keep it on chopper and give shape with bowl.













12. ENJOY with sauce or chutney.

OATMEAL DOSA

OATMEAL DOSA

INGREDIENTS

1cup grinded oats
1/4 cup suji
1/4 cup HOMEMADE RICE FLOUR or 1 tbsp wheat flour
1/2 cup curd
2 cups water
2 tsp coriander
1 tsp pepper
salt to taste

METHOD

In a bowl, mix all the dry ingredients, and make a batter by adding curd, you can add water if required. In a pan, heat oil and put the batter and cook till it turns golden brown. serve hot with chutney or sauce

Tip: Rice flour can be made by soaking rice overnight, dry it for one day and grind to make a flour.
